Banana Maple Pecan Muffins

  • 2 eggs
  • ¼ cup olive oil
  • ½ cup maple syrup
  • 1 cup mashed bananas (2 - 3 bananas)
  • ½ cup milk
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • 1 cup Pereg banana flour
  • ½ cup chopped pecans, divided

Preheat oven to 350°F. Mix olive oil and maple syrup until combined.  Add in bananas, milk and vanilla and mix well. Stir in baking powder, cinnamon and banana flour just until fully combined.  Fold in ⅓ cup of pecans. Pour ¼ cup of batter into each of 12 greased muffin cups and top with remaining pecan pieces.  Bake 20 to 25 minutes at 350°F until toothpick inserted in center comes out clean
