Preheat oven to 325 degrees F. Line a baking sheet with foil and set aside.
In a medium saucepan, combine coconut oil, honey, cinnamon, cardamom, vanilla and salt, and heat just until coconut oil is melted and all ingredients are combined.
In a large bowl, combine buckwheat, oats, pumpkin sheets and almonds. Stir in honey mixture and spread onto the baking sheet in a single layer.
Bake for 20-25 minutes, stirring after 12 minutes.
Let cool and eat! Granola can be store in an airtight container for up to 5 days.
