Bulgur- Herbed Tabouli Salad
Bring water to a boil in a medium saucepan, then add in bulgur wheat and remove from heat. Cover and let sit about 20 minutes until the water is absorbed. Let cool.
Mix in tomatoes, red onion, green onions, cilantro, parsley and mint. In a small separate bowl, whisk together lemon juice, garlic, olive oil and salt and pepper. Blend with bulgur mixture and let chill for at least at hour. Serve at room temperature with another squeeze of fresh lemon juice.

- 2 cups water
- 2 plum tomatoes, diced
- ¼ small red onion, diced small
- ½ cup green onions, sliced thin
- ½ cup cilantro, chopped
- ½ cup parsley, chopped
- 1 lemon, juiced
- 2½ tablespoons extra virgin olive oil
