Oatmeal Banana Pancakes

Preparation

STEP 1

In a large bowl, combine bananas, coconut oil, eggs and vanilla. Then add oat flour, sugar, cinnamon, baking powder and salt and combine.

STEP 2

Add the oat flour, sugar, cinnamon, baking powder and salt and mix until combined. It’s okay if there are some banana chunks.

STEP 3

Let the batter rest for 10 minutes.

STEP 4

Heat a large nonstick pan over medium heat and grease the pan.

STEP 5

Scoop ¼ cup scoops of batter into the pan and cook two minutes on one side, until the sides start to brown. Flip and cook until cooked through. Repeat with remaining batter. Best served immediately.

Ingredients

  • 1 cup mashed ripe banana 2-3 bananas
  • 2 tablespoons melted coconut oil or butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sugar 
  • 1 cup Pereg Natural Oat Flour purchase
  • ½ teaspoon Pereg Ground Cinnamon purchase
  • ¼ teaspoon Pereg Fine Red Sea Salt purchase
  • ½ teaspoon baking powder
