Kosher For Passover Cranberry Orange Quinoa Muffins

Yields 1 dozen Muffins

2 cups Pereg Quinoa flour (OU-P)
1/3 cup sugar
1.5 tsp baking soda
1/4 tsp Pereg Cinnamon
3 Tbsp margarine
3 eggs
1 tsp vanilla
1 cup milk
½ cup honey
Zest of 1 Orange
1 cup frozen cranberries (do not thaw)


Step 1
Preheat oven to 375 degrees

Step 2
Mix all dry ingredients together. In another bowl, mix wet ingredients. Slowly incorporate the dry ingredients into the wet. After batter is mixed, add in cranberries and stir.  Scoop batter into muffin tin.

Step 3
Bake for 20 minutes
